BIOGRAPHY

Florian is first and foremost a wine lover and innovation enthusiast. To pursue a career around the subjects he is passionate about, he quickly moved towards a double degree in agricultural engineering & master in food quality within the ENSAT, in Toulouse, France. At the end of his engineering degree, a successful internship with Lallemand led him to a PhD in agri-food biotechnology in 2016. His thesis, which took place within the Institut Universitaire de la Vigne et du Vin (IUVV, Dijon, France), mainly focused on the characterization and understanding of the properties of inactivated yeasts naturally rich in antioxidants with high precision technologies. This particular work led to the publication of several scientific papers and a patent.

Today he works for Lallemand as R&D project manager and is detached at the IUVV. He works on a wide range of topics such as the wine oxidative stability or the specific properties of technological winemaking tools. His skills in analytical chemistry and scientific communication allow him to be a keystone between the world of research and the Lallemand teams.
